I have a guest chef this week all the way from Nebraska. He is a 7-year old 2nd grader who just happens to be my nephew. Cooper isn’t new to the kitchen and is really excited to share these with you. The consensus from all who have tried them is that they are really good! Cooper’s dad was a little hesitant to try them, because last time Cooper came up with a recipe the outcome wasn’t great (BroccoMuffins should explain it all). But I LOVE that the less-than-stellar outcome didn’t stop him. The next recipe he wants to try…pigs in a blanket. We’ll be waiting!!
***NOTE: Cooper created these as muffins and they are delicious muffins! However, when we first mixed these up the batter was the consistency of pancakes so when we tried them as pancakes everyone agreed…some of the best pancakes ever tasted. EVER!
Gluten Free Dairy Free Banana Bread Pancakes
2 teaspoons cinnamon, optional
Mix it all together and scoop 1/4 cup scoopfuls onto a griddle and cook, turn, and cook. Makes 27 gluten free pancakes. OR… Mix it all together, put in muffin tins, bake for 18 minutes at 350 degrees. Makes 30 muffins.
