
My son came up with these…kind-of. He was telling me to dump more chocolate and more chocolate and more chocolate in and so technically he did help. Chocolate for breakfast never hurt anyone. At least I don’t think it did.
1 cup white beans, cooked and cooled (I used Great Northern)
2 T water
1-1/2 cups teff flour
1/2 cup cocoa
1 cup brown rice flour
2 T baking powder
1 t salt
6 eggs
2 T honey
2-3/4 cups almond or coconut milk
2/3 cup coconut oil, liquefied
1 dark chocolate bar, chopped
Pre-heat up your waffle iron. In a small blender or food processor, combine the beans and water until it forms a thick paste. Add more water if needed. Combine all ingredients (including the bean paste) into a large bowl, leaving the coconut oil and dark chocolate for last. Pour into a waffle iron (this large batch made 6 Belgian waffles) and bake. Top with peanut butter and maple syrup.

What can I substitute for the brown rice flour?
Any other flour. Millet, sorghum, and teff flours are my favorites.
