Divide into 6 balls, rolling each one out to form an oval. On one side of the oval, spread 2 tablespoons peanut butter, top with 1/2 banana, chopped, and sprinkle with 2 tablespoons chocolate chips. Repeat on the other dough ovals. Fold the other side over the filling, pinch the sides together, make some slits in the top with a knife and bake for 20 minutes in a pre-heated 450 degree oven.

Sometimes you just need some ribs. Okay, maybe you don’t, but they sure do taste good and are really easy to make and I like easy. Sprinkle some spice on them and walk away. What is easier than that? My big kids feel big when they eat them too because we don’t cut the meat off the bones for them. Now if only we could get the kids to do the dishes, then life would be easier too.

1 package of pork ribs
1 T chili powder
1/2 T smoked paprika
1 teaspoon cumin

Preheat the oven to 350 degrees. Put in a roasting pan and bake for 90 minutes.

I recently went vegan for 3 weeks. I did it because I saw a couple of movies (one of them very popular) about the diet and thought it was worth a shot…just to see. I was expecting to feel amazing. Turns out, I already do. The diet did force me to get creative in the kitchen again and cause me to really think about where our food comes from. While on the diet, I created these. These vegan gluten free waffles are light and flaky. My kids LOVE, LOVE these vegan waffles. My youngest ate three (Belgian quarters) at one sitting and that NEVER happens.

1-1/2 cups whole grain sorghum

1 cups gluten free steel cut oats
1/2 cup quinoa flakes

***Stir the above together in a bowl and let sit overnight. The next morning will be a big mushy bowl of goo. Steel cut oats are big soaker-uppers! Now…I will tell you the ingredients that you will add to your blender and the order to add them, however I recommend doing it in two different batches (so split everything in half). The first time I did it, I couldn’t get the stuff to blend all that well. AND, I found that I have to PULSE, PULSE, PULSE, PULSE (LOTS), and then just turn it on and leave it on.

My plan was to make chicken like the buffalo barbacoa that my family loves. With just a couple of tweaks, this chicken turned out perfect. Just ask my family. My kids said this shredded chicken recipe was the best chicken EVER!! We all loved it, so I believe them. I served it on a bed of refried beans and topped it with chopped tomato and avocado. Leftovers…well, I’m sure they taste great the next day, but we didn’t have any.

1/2 T olive oil
2-1/2 pounds boneless, skinless chicken thighs
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon cumin
1 teaspoon sea salt
2 garlic cloves, minced
1 cup water

Preheat the oven to 300 degrees. Heat the olive oil in a dutch oven, or large oven-proof pot, over medium/high heat. Add the chicken thighs and sprinkle all of the spices over the chicken. Cook for 2 minutes, turn and cook for 2 more minutes. Add the water. Put an oven-proof lid on the pot and put it in the oven for 3 hours. Take the lid off after the three hours, increase the heat to 350 degrees, and cook for another 30 minutes or until most of the liquid is gone. It shreds SO easily with a fork.

We have family come from out of town a few times a year and I now know what I will be serving them when they come. This was also a great way to get my picky breakfast eater to get some protein and veggies in with her most important meal of the day. They turned out great. Serve them with green chili or salsa and your meal will be complete.

1 recipe Pizza Dough

3 gluten-free dairy-free sausage links

2 cups spinach

1/2 large red onion

3 Roma tomatoes

6 eggs

1 T oregano

Make the pizza dough and roll out into 6 ballls. Roll each ball into an oval. Preheat the oven to 450 degrees. Cook the sausage, spinach, onion and tomato in a large frying pan until cooked through. Add the eggs, beating as you add them to scramble them. Stir in the oregano. Spoon 2/3 cup onto each half of the oval. (You will have some leftover, but putting a cup onto each made them REALLY full and some of them had a hard time staying together.) Fold the other half of the dough over the filling, pinch the sides together, make three slits on top of each with a knife, and bake on cookie sheets for 20 minutes.

It will probably take you longer to read this post than to make this delicious dip. Is it cheesecake? Nope. Does it taste like cheesecake? Yep. Does it have thousands of calories like real cheesecake? Nope. You’re welcome.

1 spoonful of coconut butter (might have to soften this in the microwave for a minute if it is solid, but that would obviously be called Easy 1-minute cheesecake dip…sorry)
1 spoonful of fruit preserves (jam, jelly…whatever you use)
Serve with sliced fruit, such as apples

I can’t believe I’m typing instructions for this…

Stir the coconut butter and the jam together. Serve with sliced fruit.
