It’s getting hot. What do you do when you eat only gluten and dairy free desserts so traditional ice cream isn’t an option? Make fruitsicles! Instead of buying popsicles full of artificial flavors and high fructose corn syrup, we make our own. I bought the spaceship popsicle mold in the $2 bin at Michaels (I promise you, they are spaceships). My kids were excited when they got to have this cool treat after running in a charity race. I will admit to going for a layered red, white and blue look, but thankfully the kids didn’t care about the presentation. This is a great gluten free recipe for kids!

1/2 cup frozen cherries
1 banana
1/4 cup frozen blueberries
2-1/2 T honey, divided

Place the frozen cherries in a microwave-safe bowl with 1 tablespoon honey. Heat in the microwave for 20 seconds. Mash them up as much as you can (there will be chunks) and pour into the 4 popsicle molds. Place the banana and 1 tablespoon of honey in a bowl and mash. Pour into the 4 popsicle molds on top of the cherries. Place the frozen cherries in a microwave-safe bowl with 1/2 tablespoon honey. Heat in the microwave for 20 seconds. Mash them up as much as you can and pour into the 4 popsicle molds on top of the bananas. Put the sticks into the popsicle molds and freeze until set.
