1 cup cooked, cooled white beans (I used Great Northern)
2 T water
1-1/2 cups teff flour
1-1/2 cups brown rice flour
2 T cinnamon
1 T nutmeg
1 t salt
2 T baking powder
6 eggs
2 T honey
2-3/4 cup almond or coconut milk
2/3 cup coconut oil, liquefied
2 cups chopped apples (skins on)
Pre-heat up your waffle iron. (Did I really have to say that?) In a small blender or food processor, combine the beans and water until it forms a thick paste. Add more water if needed. Combine all ingredients (including the bean paste) into a large bowl, leaving the coconut oil and chopped apples for last. Pour into a waffle iron (this large batch made 6 Belgian waffles) and bake. Top with maple syrup and enjoy a nice fall breakfast.
