These are kind of cake like, but everyone here loves them. Maybe they should be called brakes or cownies?
10 pitted dates, soaked in water for 50 minutes
1/3 cup water (I use reserved date water.)
1-1/3 cup teff flour
1/3 cocoa
1/3 cup honey (ours was raw orange blossom…the orange flavor really popped out!)
2 eggs
2/3 cup applesauce
1 T vanilla
In a food processor, beat the dates and water until it forms a paste. Put it in a bowl with the rest of the ingredients. Stir it. Put it in a greased 9 x 9 pan. Bake for 35 minutes at 350 degrees. Once cool, cut into the shape of tombstones.
