When my daughter finished her first day of Kindergarten I surprised her with a cake that looked like a green Crayon. She was so excited! Now I home-school and totally forgot about surprising my son with a special cake or treat to celebrate his first day of Kindergarten. Oops. Thankfully, we totally failed at taking the kids camping as often as we wanted to this summer and had some leftover jumbo marshmallows in the pantry. PHEW! I also happen to have a case of dark chocolate bars in my cabinet (it’s good for you, don’t judge) so the obvious answer to my dilemma was S’mores! But I didn’t have any graham crackers and didn’t want to make any, so what is a forgetful, hoping to be superMom do? Slice up an apple, that’s what. And when the students were eating their S’mores I heard the following…”Mommy is TOTALLY AWESOME!” Thank goodness I didn’t fail the first day!!
1 JUMBO marshmallow
3 little squares, dark chocolate
Slice the apple into circles. Remove any seeds that are hiding. Slice your JUMBO marshmallow into 3 equal pieces and place one on top of an apple slice. Place a small square of dark chocolate on top of the marshmallow and broil in your pre-heated oven for seconds. Does not take long. Top with another apple slice.
***I have seen recipes for Paleo marshmallows online. The JUMBO marshmallows at the grocery store, are not Paleo.
