Any French fry loving kid will love roasted potatoes. They taste the same, but there is obviously no need to fry. I thought everyone roasted potatoes, but every time I make these for company, I am asked how I do it and there are never any leftovers. These are a great sidekick to burgers as well as a base for breakfast. Serve some meat and eggs over them, maybe a little green chile, and you will have one of the best breakfasts ever!
5 potatoes (I usually assume one potato per person)
1 T olive oil
1 teaspoon salt
1/2 teaspoon pepper
Gluten free cooking spray
Preheat oven to 450 degrees. Cut the potatoes into cubes and toss with the olive oil. Spread onto greased cookie sheets and sprinkle with salt and pepper. Bake for 20 minutes, stir, then bake for an additional 20 – 30 minutes. Your potatoes should come out brown and crispy.
