10-Minute Chia Berry Jam

1⅔ cups (250 g) strawberries, fresh or frozen

Method
- Simmer the berries and allulose in a small saucepan over medium heat, mashing with a fork as they collapse, about 6–8 minutes.
- Kill the heat and stir in the chia seeds and lemon juice.
- Let stand 10 minutes — the chia sets it to a proper spreadable jam as it cools.
- Jar it. Keeps 2 weeks refrigerated; it thickens further overnight.
