What protein ice cream is — in one paragraph
Protein ice cream is ice cream re-engineered around a protein target instead of a fat-and-sugar target: a milk (usually low-fat or plant), a scoop-plus of protein powder, a sweetener, and a pinch of stabilizer, frozen and then churned or spun into scoopable form. The recipes in this collection provide roughly 150–226 calories and 20+ g protein per serving. Commercial ice cream varies widely by brand and serving size, so compare against the actual label rather than one universal “premium scoop” number. Bad texture is usually a formulation or process problem, not proof that high-protein frozen desserts cannot work.
Ice cream texture is a physics contract: fat, sugar, and air each do a job. Remove them and something must do their jobs — or the water in the base freezes into exactly what it wants to be: ice.
The base formula (memorize this, improvise forever)

Why the sweetener choice decides everything
In ice cream, sugar is not only a sweetener. Dissolved sugars depress the freezing pointand help control how much water is frozen at serving temperature. The exact unfrozen-water fraction depends on the full recipe and freezer temperature, not one universal percentage.
- Stevia or monk fruit drops: add sweetness at trace doses but almost no dissolved mass, so they cannot replace sugar's physical role alone.
- Erythritol: can recrystallize and create a firmer or grainier frozen dessert; the result depends on concentration and the rest of the formulation.
- Allulose: is a small dissolved sugar that contributes meaningful freezing-point depression. FDA guidance uses about 0.4 calories per gram for U.S. labeling.
Allulose is one part of this system, not a guarantee that every refrozen pint stays soft. Protein, xanthan, total solids, freezing conditions and the Creami processing cycle all matter. Protein powder: the texture wildcard
Powder is the ingredient you can't fully standardize — brands differ — but the categories behave predictably:

Whatever you choose: unsweetened or lightly sweetened, and check the label if you're allergen-constrained — plant blends routinely sneak in soy lecithin, and "cookies & cream" flavors sneak in gluten. Machines, ranked honestly
The Ninja Creami (the reason this hub exists)
The Creami is not a conventional churner. Ninja describes its Creamerizer paddle as finely shaving and transforming a uniformly frozen base after the freeze. That processing method works well for these lower-fat, high-protein formulas because texture is developed mechanically after the pint has frozen. Results still depend on a level, fully frozen base and the correct program. Theflavor library andmaster recipe use the official Lite Ice Cream and Re-Spin program names.
No machine: the pan-and-fork method
Pour the same base into a shallow metal pan, freeze, and scrape and beat it every 30 minutes to interrupt ice-crystal growth. After about 2½ hours, cover and freeze until set. The result is coarser and less repeatable than a Creami spin, but it is a workable no-machine method. Allulose contributes freezing-point depression; it does not guarantee that a stored pan remains scoopable for a fixed number of days.
Instant soft-serve (the 5-minute cheat)
Frozen fruit + protein powder + a splash of almond milk in a decent blender makes soft-serve quickly. Banana and mango carry it best because their fiber and sugars add body. Treat it as an immediate dessert; blender soft-serve generally refreezes harder and coarser regardless of sweetener.
