⅔ cup (120 g) allulose

2 Tbsp (40 g) allulose maple syrup

⅓ cup (80 g) coconut cream (thick top of a chilled can)

1 tsp vanilla extract

Method

  1. Melt the allulose and allulose syrup in a light-colored saucepan over medium-low, swirling (not stirring) as it liquefies.
  2. Watch closely: allulose can brown faster than sugar in this formula. Pull it at medium amber, usually 4–6 minutes, and account for residual heat.
  3. Off heat, whisk in the coconut cream — it will bubble hard, keep whisking until smooth.
  4. Stir in vanilla and salt. It thickens as it cools. Refrigerate promptly in a clean sealed jar, use within 5 days, and warm gently to loosen.
