Method

  1. Marinate the chicken in the aminos, ginger, garlic, and sesame oil, 30 minutes minimum — the ginger is the karaage signature.
  2. Drain lightly, then toss through the cornstarch until each piece wears a craggy, clumpy jacket. The clumps become the crunch.
  3. Mist heavily on all sides and air-fry at 400°F for 12–14 minutes, flipping once, until golden with darker ridges.
  4. Rest 2 minutes (the shell sets), then pile over rice with the cabbage and squeeze lemon over everything.
