Method

  1. Sear the chicken and both mushrooms hard in half the oil until browned; set aside. Browned mushrooms = the flavor budget.
  2. Soften the onion in the rest of the oil, add garlic, then the arborio. Toast the rice 2 minutes until the edges turn glassy.
  3. Add hot broth a ladle at a time, stirring, letting each absorb before the next — 18–20 minutes of low-effort stirring until the rice is creamy with a faint bite.
  4. Fold in the chicken, mushrooms, nutritional yeast, and lemon. The nooch does the salty-savory “parm” job so convincingly it's disorienting.
  5. Rest 2 minutes off heat, loosen with a final splash of broth (risotto should spread, not mound), herbs on top.
