3 cups (500 g) chickpeas, drained (liquid reserved)

Method

  1. The one non-negotiable: simmer the drained chickpeas 10 minutes in water with a pinch of baking soda, then rub off the skins under running water. Skins are what stand between you and silk.
  2. Blend the tahini, lemon, and garlic FIRST until pale and whipped.
  3. Add the warm chickpeas, cumin, and salt; blend a full 2 minutes, streaming in ice water until it's soft-serve smooth.
  4. Sweep into a bowl, drag a spoon-spiral, and finish with olive oil and za'atar in the grooves.
