Method

  1. Dice everything to the size of a chickpea — the small uniform dice is genuinely the entire dish. Sharp knife, some patience.
  2. Chop the herbs fine and toss everything with lemon, oil, and salt.
  3. Rest 10 minutes, toss again, taste — it should be bright enough to squint at. More lemon and salt until it is.
