Method

  1. Toast the cashews in the dry wok until golden-freckled; set aside.
  2. Whisk the sauce: aminos, vinegar, allulose, cornstarch, and 3 Tbsp water.
  3. Sear the chicken hard in a misted wok until golden, ~5 minutes. Push aside; bloom the chilies, peppercorns, garlic, ginger, and onion whites for 30 seconds.
  4. Peppers and zucchini in, 90 seconds — they should stay snappy.
  5. Sauce in: it thickens in under a minute. Off heat, fold in the cashews, sesame oil, and onion greens. Serve over rice.
