Method

  1. Khao khua first: toast the raw rice in a dry pan, shaking, until deep gold and nutty, then grind to coarse sand. This is larb's signature crunch and aroma.
  2. Cook the turkey in a splash of water over medium, chopping fine, just until done — larb meat is poached-ish, not browned.
  3. Off heat, dress the warm meat with fish sauce, lime, and chili flakes. It should taste aggressively hot-sour; the rice and lettuce will tame it.
  4. Fold in the shallots, green onions, herbs, and most of the toasted rice.
  5. Serve warm with lettuce cups, cucumber, green beans, sticky rice, and the last rice powder dusted on top. Scoop, wrap, repeat.
