Method

  1. Soften the onion, carrot, and celery in the oil, 6 minutes; garlic for 1.
  2. Add tomatoes, broth, herbs, and green beans; simmer 10 minutes.
  3. Add the beans (mash a ladleful against the pot for body), zucchini, and pasta; simmer until the pasta is just tender, ~8 minutes.
  4. Kill the heat, wilt in the spinach, and stir through the nutritional yeast.
  5. Taste hard for salt — bean soups drink it. A drizzle of good olive oil at the table if you have calories to spend.
