Spinach Gomaae (Sesame Spinach)

2 Tbsp (18 g) sesame seeds, toasted

Method
- Blanch the spinach 45 seconds, shock in ice water, and squeeze into a firm log. Slice the log into 2" segments.
- Toast the sesame seeds until fragrant and popping, then grind most of them coarsely (mortar, spice grinder, or bag + rolling pin).
- Whisk the ground sesame with the aminos, allulose, and vinegar into a nubby dressing.
- Toss the spinach segments through it and top with the whole reserved seeds. Serve cold or room temp.
