Method

  1. Get a wide skillet very hot and press the beef into one big patty. Leave it 3 minutes to build a serious crust before breaking it up.
  2. Add the spices, tomato paste, and water; simmer 2–3 minutes until the beef is saucy but not wet. Kill the heat, stir in the lime juice.
  3. Char the tortillas directly over a burner flame (or in a dry ripping-hot pan) a few seconds per side.
  4. Stack 3 tacos per person: beef, minced onion, cabbage, cilantro, salsa. Lime wedge on the side, no exceptions.
