Method

  1. Mix both turkeys with the grated onion, herbs, and half the spices. Wet hands, shape 16 torpedo-shaped kofta.
  2. Brown them hard in a misted skillet, 2 minutes a side — color, not doneness. Remove.
  3. Same pan: diced onion, garlic, tomato paste, remaining spices, 2 minutes. Add tomatoes and chickpeas; simmer 5.
  4. Nestle the kofta back in, cover, and simmer gently 12 minutes.
  5. Serve over rice with thinned tahini ribboned across and more herbs. The cinnamon in the sauce is the 'why does this taste like a grandmother made it' ingredient.
