Method
Melt the allulose and allulose syrup in a light-colored saucepan over medium-low, swirling (not stirring) as it liquefies.
Watch closely: allulose can brown faster than sugar in this formula. Pull it at medium amber, usually 4–6 minutes, and account for residual heat.
Off heat, whisk in the coconut cream — it will bubble hard, keep whisking until smooth.
Stir in vanilla and salt. It thickens as it cools. Refrigerate promptly in a clean sealed jar, use within 5 days, and warm gently to loosen.
Storage & rescue. Drizzle on ice cream, popcorn, apples, pancakes. If it seizes, return to low heat with a spoon of water and whisk.
