Method

  1. Whisk the chia, protein, psyllium, half the cinnamon, and half the allulose in a jar. Add the almond milk and vanilla; whisk until nothing is dry, then whisk once more 5 minutes later — chia always clumps on the first pass.
  2. Refrigerate overnight, or at least 4 hours, until set to a spoonable pudding.
  3. Before serving, toss the diced apple with the remaining cinnamon and allulose in a hot dry nonstick pan for 2–3 minutes until it smells like pie filling.
  4. Pile the warm apples on the cold pudding. The hot-cold contrast is elite.
