Method

  1. Whisk the yogurt, mayo, half the lime juice, and hot sauce into crema. Toss half of it with the cabbage; keep the rest for drizzling.
  2. Pat the fish very dry. Dip strips through egg whites, then press into the panko-cornstarch-spice mix.
  3. Mist generously and air-fry at 400°F for 8–10 minutes until golden and flaking.
  4. Char the tortillas, double-up per taco if you like structure.
  5. Build: dressed cabbage, fish, crema drizzle, cilantro, remaining lime squeezed over at the table.
