Method

  1. Brown the beef hard in a big pot — crust, not gray. Add onion, pepper, and garlic; cook 5 minutes.
  2. Push everything aside and fry the tomato paste, spices, and cocoa in the cleared spot for 60 seconds until dark and fragrant.
  3. Add tomatoes, beans, and broth. Simmer partially covered 35–40 minutes, stirring now and then, until thick enough to hold a spoon upright-ish.
  4. Finish with the vinegar and allulose — acid and a touch of sweet make the smoke pop.
  5. Serve with whatever cool/crunchy things you love: onion, jalapeño, a spoon of dairy-free yogurt.
