Method

  1. Sweat the onion, garlic, and jalapeño in a misted pot, 4 minutes. Bloom the spices for 30 seconds.
  2. Add the whole chicken breasts, broth, and green chiles. Simmer covered 18 minutes, then shred the chicken right in the pot.
  3. Blend one cup of the beans with a ladle of the broth and stir it back in — that's the creaminess, no dairy involved.
  4. Add the remaining whole beans and simmer 5 minutes to marry.
  5. Finish with lime and cilantro. Squeeze more lime at the table than feels reasonable.
