Birthday Cake Protein Ice Cream
Cake-batter flavor is mostly a vanilla-almond duet: vanilla carries the frosting note and a small measure of almond extract does the 'batter' part. The sprinkles are real — measured in grams like everything else — and go in after the spin so the colors stay put.

1⅔ cups (400 g) unsweetened almond milk
400 g
1⅔ scoops (50 g) vanilla protein powder
50 g
¼ cup + 1 Tbsp (55 g) allulose
55 g
1½ tsp vanilla extract
6 g
½ tsp almond extract
2 g
½ tsp xanthan gum
1.5 g
pinch of fine salt
1 g
2 tsp (8 g) rainbow sprinkles (gluten-free, soy-free brand)
8 g
Method
- Blend everything except the sprinkles for a full 30 seconds, until frothy and completely dissolved.
- Pour into the Creami pint up to (never past) the MAX line. Freeze 24 hours on a level freezer shelf.
- Spin on Lite Ice Cream. If the first pass is crumbly or powdery, use Re-Spin.
- Fold the sprinkles in by hand with 3–4 strokes. A Mix-In cycle works too but bleeds more color into the base.
