Ingredients

1⅔ cups (400 g) unsweetened almond milk
400 g
1⅔ scoops (50 g) vanilla protein powder
50 g
¼ cup + 1 Tbsp (55 g) allulose
55 g
2 tsp vanilla extract (or ½ scraped vanilla bean)

½ tsp xanthan gum

pinch of fine salt

Method

  1. Blend everything for a full 30 seconds, until frothy and completely dissolved — undissolved protein is where chalky texture comes from.
  2. Pour into the Creami pint up to (never past) the MAX line. Freeze 24 hours on a level freezer shelf.
  3. Spin on Lite Ice Cream. If the first pass is crumbly or powdery, use Re-Spin.
  4. If the pint remains dry after Re-Spin, add 1 Tbsp almond milk and Re-Spin again. Serve immediately or smooth the top and refreeze.
