Method

  1. Blend the tomatoes, chipotles, onion, and garlic into a smooth red sauce.
  2. Sear the zucchini in the oil until browned; push aside.
  3. Add the shrimp in a single layer, 60 seconds per side — undercooked is correct here, they finish in the sauce.
  4. Pour in the sauce and simmer 3–4 minutes until it thickens to a glaze and the shrimp curl into loose C's (tight O's = overdone).
  5. Lime, cilantro, and serve over rice with extra sauce spooned everywhere.
