Method

  1. Brown the onion in the oil properly — 10 unhurried minutes to deep gold. Pale onions make thin chana; this step IS the gravy.
  2. Add garlic, ginger, and spices; fry 60 seconds until it smells like the restaurant's kitchen door.
  3. Add tomatoes and simmer 5 minutes, then the chickpeas plus a cup of water. Simmer 15 minutes, mashing a spoonful against the pot wall to thicken.
  4. Finish aggressively with lemon and cilantro — chana should be tangy first, warm-spiced second.
  5. Serve over rice, or with the garlic flatbread from this section.
