Method
- Marinate the chicken in 80 g of the yogurt, the spice blend, lemon, garlic, and ginger — 30 minutes minimum; the yogurt's the tenderizer.
- Chutney: blend the herbs, jalapeño, lime, allulose, remaining 40 g dairy-free yogurt, and a pinch of salt into a loose green sauce.
- Thread chicken with pepper squares and onion petals. Broil or grill on max, 4–5 minutes a side, until blistered dark in spots.
- Toss the cucumber and tomato with salt and a squeeze of lime — kachumber.
- Serve skewers over rice, chutney over the chicken, salad on the side.
