Method

  1. Brown the beef with the onion in a deep 12" skillet over medium-high, about 6 minutes; add garlic, tomato paste, and spices for the last minute.
  2. Pour in the broth and almond milk, scrape the bottom clean, and stir in the dry pasta so it's submerged.
  3. Simmer uncovered, stirring every few minutes, 9–11 minutes until the pasta is just tender and the liquid is saucy.
  4. Off heat, stir in the “cheese” sauce, ketchup, and mustard until everything is glossy orange nostalgia.
  5. Bowl it and top with chopped pickles. They cut the richness exactly like they do on a burger.
