Method
- Whisk the flours, starch, psyllium, yeast, allulose, and salt. Add the warm water and oil; stir into a thick, spreadable dough. Rest 30 minutes — it will puff slightly and firm up.
- Meanwhile, brown the turkey with the fennel/chili half of the spice blend into sausagey crumbles. Stir the crushed tomatoes, paste, and herby half of the spices into a no-cook sauce.
- Oil a 12" cast-iron pan or pizza pan. Spread the dough with wet fingers, building a slightly raised rim.
- Par-bake at 450°F (230°C) for 12 minutes until set and lightly golden.
- Sauce it, then load: turkey crumbles, ham, onion, pepper, shreds. Bake 10–12 more minutes until the rim is deep brown.
- Rest 3 minutes, cut into 6 slices (2 per serving).
