Method

  1. Grate the zucchini, salt it lightly, wait 10 minutes, then wring it out HARD in a clean towel — you should extract several tablespoons of water. Skipping this makes soup.
  2. Whisk the dry ingredients. Whisk the egg whites, applesauce, vinegar, and vanilla, then stir in the zucchini.
  3. Combine wet and dry, folding in most of the chips at the end. The batter is thick — that's correct.
  4. Fill 12 lined cups, press the reserved chips on top, and bake at 350°F (175°C) for 20–22 minutes.
  5. Cool 10 minutes before eating — cocoa crumb sets late.
