1¼ cups (300 g) unsweetened dairy-free yogurt

1 cucumber (200 g), grated and squeezed

¾ tsp cumin seeds, toasted and crushed + ½ tsp salt

Method

  1. Toast the cumin seeds in a dry pan until fragrant, then crush — toasted whole seeds taste twice as loud as pre-ground.
  2. Grate the cucumber and squeeze it firmly in your fist over the sink; watery raita is a rookie tell.
  3. Stir everything together and chill 20 minutes. Finish with a pinch of the cumin on top.
