Method

  1. Sauté the ham, pepper, onion, and mushrooms in a misted 10" nonstick skillet over medium-high until the edges brown, 4–5 minutes. Wilt in the spinach and tip everything onto a plate.
  2. Re-mist the pan, drop to medium-low, and pour in the seasoned egg whites.
  3. As they set, push the cooked edge toward the center and tilt so raw egg runs underneath. Stop while the top is still glossy.
  4. Scatter the filling and the shreds over one half, fold, cover 60 seconds to melt, and slide onto the plate.
