Peaches and Cream Protein Ice Cream

Peaches carry less water than berries and blend silkier, which makes them one of the easiest fruits in the Creami. A single tablespoon of coconut cream supplies the 'and cream' without turning the pint into a coconut recipe — frozen slices work all year.

1 cup + 1 Tbsp (260 g) unsweetened almond milk
260 g
1 cup (160 g) sliced ripe peaches (fresh or frozen)
160 g
1 Tbsp (15 g) coconut cream (thick top of a chilled can)
15 g
1⅔ scoops (50 g) vanilla protein powder
50 g
3½ Tbsp (45 g) allulose
45 g
1 tsp lemon juice
5 g
1 tsp vanilla extract
4 g
½ tsp xanthan gum
1.5 g
pinch of fine salt
1 g

Method

  1. Blend everything 30–45 seconds until completely smooth (thaw frozen peaches 10 minutes first so the blender catches them).
  2. Pour into the Creami pint up to (never past) the MAX line. Freeze 24 hours on a level freezer shelf.
  3. Spin on Lite Ice Cream. If the first pass is crumbly or powdery, use Re-Spin.
  4. Serve as is, or fold in a handful of chopped fresh peach after the spin for texture.
