Chocolate Fudge Protein Ice Cream
Chocolate is the flavor that exposes cheap protein ice cream: skimp on cocoa and it tastes like the powder, rush the blend and it lands grainy. This version fixes both with real cocoa, a longer blend, and a pinch of salt that is not optional.

1⅔ cups (400 g) unsweetened almond milk
400 g
1⅔ scoops (50 g) chocolate protein powder
50 g
¼ cup (20 g) unsweetened cocoa powder
20 g
⅓ cup (65 g) allulose
65 g
1 tsp vanilla extract
4 g
½ tsp xanthan gum
1.5 g
pinch of fine salt (non-negotiable in chocolate)
1 g
Method
- Blend everything a full 30–45 seconds — cocoa needs the time to hydrate or the finished scoop turns grainy.
- Pour to the MAX line, cap, and freeze 24 hours on a level shelf.
- Spin on Lite Ice Cream. If the first pass is crumbly or powdery, use Re-Spin.
- If it remains dry, add 1 Tbsp almond milk and Re-Spin again for a softer texture.
