Method

  1. Simmer the chicken, broth, onion, and spices in a covered pot for 18–20 minutes until the chicken shreds under a fork.
  2. Meanwhile, massage the slaw mix with half the vinegar, the allulose, and a big pinch of salt. Chill — it softens and sharpens as it sits.
  3. Shred the chicken in the pot with two forks, letting it drink the cooking liquid.
  4. Stir in the BBQ sauce, syrup, and remaining vinegar; simmer uncovered 3–4 minutes until glossy and thick.
  5. Stack chicken high on toasted bread and crown with the cold slaw. Hot + cold, soft + crunchy — that contrast is the sandwich.
