1 Tbsp (15 g) light mayonnaise (soy-free)

Method

  1. Stir the mayo, ketchup, mustard, and minced pickles into special sauce. Set aside.
  2. Divide the beef into 4 loose balls — do not pack, do not season yet.
  3. Get a cast-iron or heavy skillet screaming hot. Drop in 2 balls, top each with shaved onion, and smash flat and thin with a firm spatula press. NOW salt and pepper them.
  4. Cook 2 minutes until the edge lace is deep brown, scrape up with a thin spatula (the crust is the point — don't leave it in the pan), flip, and cook 60 seconds more. Repeat with the rest.
  5. Toast the bread in the beef pan. Build: sauce, lettuce, tomato, two patties with their onions, pickles, sauce again, lid.
