1 can + ¾ cup (480 g) black beans, drained and rinsed well
480 g
½ cup + 2 Tbsp (50 g) unsweetened cocoa powder
50 g
3 Tbsp + 1 tsp (25 g) tigernut flour (chufa)
25 g
1 Tbsp + 1 tsp (10 g) cornstarch
10 g
1 scoop (30 g) chocolate protein
30 g
⅓ cup + 4 tsp (100 g) liquid egg whites
100 g
¾ cup (150 g) allulose
150 g
1½ Tbsp (30 g) allulose maple syrup
30 g
1 tsp instant coffee (amplifies chocolate, invisible otherwise)
2 g
1½ tsp GF baking powder
6 g
2 tsp vanilla extract
8 g
⅓ tsp salt
2 g
3 Tbsp (40 g) allergen-friendly dark chocolate chips
40 g
Method
- Rinse the beans until the water runs clear — this is the difference between 'fudge' and 'chili'.
- Blend everything except the chips until completely smooth, scraping down twice. No visible bean fragments allowed.
- Fold in most of the chips, spread into a lined 8×8" pan, and stud the top with the rest.
- Bake at 350°F (175°C) for 22–25 minutes until the edges pull away and the center is just set with a faint jiggle.
- Cool fully, then chill 1 hour before cutting into 12. Cold setting is what creates the fudge texture — warm cutting creates pudding.
