Method

  1. Whisk the dry (with 90 g allulose and a third of the cinnamon); whisk the wet; combine until just smooth.
  2. Pipe or spoon into a greased 10-cavity donut pan, filling ⅔ full.
  3. Bake at 350°F (175°C) for 10–12 minutes until they spring back to a poke.
  4. Blitz the remaining 40 g allulose to a finer grind, mix with the remaining cinnamon.
  5. While warm, mist each donut faintly and roll through the cinnamon mix so it clings. Warm donut + fresh coating is a top-five food experience.
