Method

  1. Whisk the mayo, lemon, mustard, coconut aminos, garlic, nutritional yeast, salt, and pepper into a thick Caesar. Loosen with a teaspoon of water if needed.
  2. Season and sear the chicken in a misted pan over medium-high, 4–5 minutes per side to 165°F. Rest 5 minutes, then slice against the grain.
  3. Toss the romaine with most of the dressing — every leaf coated, like a real Caesar, not a drizzle situation.
  4. Warm the tortillas, pile in the dressed romaine and sliced chicken, finish with the remaining dressing and a dusting of nutritional yeast, and roll tight.
