Mint Chip Protein Ice Cream
A small handful of spinach colors the pint without food dye and is masked by the peppermint and chocolate. Use a neutral, thoroughly washed leaf and blend until no flecks remain.

1½ cups + 2 Tbsp (380 g) unsweetened almond milk

Method
- Blend everything except the chocolate chips for a full 45 seconds — the spinach must fully disappear into the base.
- Freeze in the pint 24 hours, then spin on Lite Ice Cream and re-spin once.
- Chop the chips roughly (small shards distribute better than whole chips), dig a well to the bottom with a spoon, add them, and run one Mix-In cycle — or just fold them in by hand.
- Taste one bowl immediately; the mint sharpens overnight, so day-two bowls are even better.
