Cold-Brew Coffee Protein Ice Cream
Coffee ice cream lives or dies on using actual coffee, not 'coffee flavor.' Instant espresso dissolves clean into a cold base and carries real roast bitterness that stands up to the sweetener — this is the flavor to convert people who think protein ice cream tastes like a shake.

1⅔ cups (400 g) unsweetened almond milk
400 g
1⅔ scoops (50 g) vanilla protein powder
50 g
¼ cup + 2 tsp (60 g) allulose
60 g
2½ tsp (5 g) instant espresso powder
5 g
1 tsp vanilla extract
4 g
½ tsp xanthan gum
1.5 g
pinch of fine salt
1 g
Method
- Blend everything 30 seconds. The base should taste slightly too strong — freezing mutes coffee more than any other flavor here.
- Freeze in the pint 24 hours, then spin on Lite Ice Cream and re-spin once.
- Serve straight, or pour a fresh shot of espresso over a bowl for the full affogato.
