3 medium russets (750 g), cut into ¼" fries

Method

  1. Soak the cut fries in cold water 20 minutes to rinse off surface starch, then dry them ruthlessly with a towel. Wet fries steam; dry fries crisp.
  2. Toss with the oil and half the seasoning.
  3. Air-fry at 380°F for 18–22 minutes in a single-ish layer (two batches if needed), shaking every 6 minutes, until deep golden.
  4. Toss the hot fries immediately with the nutritional yeast and remaining seasoning — it clings like parm dust.
