7 oz (200 g) chickpea shells or elbows

⅓ cup + 1 Tbsp (100 g) unsweetened almond milk

Method

  1. Toast the panko in a misted dry pan with a pinch of salt until golden. Set aside — this is the crunch that makes it feel baked.
  2. Cook the pasta a full minute short of the package time; drain.
  3. Warm the “cheese” sauce with the almond milk and mustard in the empty pot until it ribbons.
  4. Fold the pasta back in over low heat until every shell is coated and glossy.
  5. Bowl it, shower with the toasted crumbs, and eat while it's molten.
