1¾ cups (70 g) GF crisp-rice cereal
70 g
¼ cup (25 g) blanched almond flour
25 g
1 heaping Tbsp (15 g) chia seeds
15 g
2 scoops (60 g) chocolate protein
60 g
3 Tbsp (15 g) unsweetened cocoa powder
15 g
4½ Tbsp (70 g) almond butter
70 g
4½ Tbsp (90 g) allulose maple syrup
90 g
2½ Tbsp (30 g) allulose
30 g
¼ cup (60 g) unsweetened almond milk
60 g
1 tsp vanilla extract
4 g
⅓ tsp salt
2 g
2 Tbsp (25 g) allergen-friendly chips, melted, to drizzle
25 g

Method

  1. Warm the almond butter, syrup, and allulose until pourable; stir in the vanilla, salt, and almond milk.
  2. Fold in the protein, cocoa, almond flour, chia, and finally the crisp rice — gently, so the crispies survive.
  3. Press very firmly into a lined 8×8" pan with damp hands; loose pressing makes crumbly bars.
  4. Drizzle with melted chocolate and refrigerate 2 hours before slicing into 10 bars.
