Method
- Blend everything except the toasted coconut for 30–45 seconds until smooth.
- Freeze in the pint 24 hours, then spin on Lite Ice Cream and re-spin once.
- Top bowls with the toasted coconut (toast it 2 minutes in a dry pan — it transforms).
