Pumpkin Spice Protein Ice Cream
Real canned pumpkin does two jobs here: pie flavor, and a silky body boost (purée is a classic gelato trick for fat-free creaminess). The spice blend blooms in the blender overnight, so this pint tastes more like pie filling on day two.

Method
- Blend everything 30 seconds until the purée fully disappears.
- Freeze in the pint 24 hours, then spin on Lite Ice Cream and re-spin once.
- Serve dusted with extra spice, or sandwich between two gluten-free graham-style crackers and refreeze for pie-in-hand.
